He regards the terroir as a major component of a wine’s typicity. He is especially driven by tradition, a passion for the craft and a meticulous approach. He always compares wine to rugby because his work is just as gritty, authentic, intuitive and as much a feat of human endeavour as the sport.
He is fascinated by the notions of ‘terroir” and tradition. Our consultant is inspired by the Burgundy model and has developed his own viticultural practices based on the qualities of minerality and freshness.
His approach is a combination of common sense, respect for a manual craft he knows from practice and tasting as a yardstick for making decisions.
